I’ve told you about my love/hate relationship with meal planning here. Today I want to share some of our current favorite meals. These are four easy recipes that I have made more than once. They aren’t just pins I’ve admired. If you are looking for something easy and delicious, here ya go! Cilantro Lime Rice (and beans)

 

This is a really simple recipe from Jen at Carlsbad Cravings that makes beans and rice something exciting. The ingredients for this are all pretty affordable and easy to find. I’ve been buying fresh limes because limes here in Houston have been 5 for $1, but if limes are hard to come by where you are, you could use bottled lime juice and I’m sure it would still be delicious. I cut up avocado and eat it with the rice. Last night I made this and cheese quesadillas. It was easy and so yummy! I doubled the recipe and have plenty leftover in my fridge (I’m looking forward to eating more today…).

Cheddar Broccoli Soup

I love to make this recipe from Andres at the Low Carb Diet food blog when the weather cools down here and put it inside bread bowls. My kids love it, too! I throw a dough recipe into our bread maker then prep the soup. It takes more effort than my average meals and you could absolutely make just the soup without the bread bowls and have a fantastic soup—I’ve done that plenty, too! But if you have a bread maker and a few extra ounces of energy, kids feel extra special when they get to eat their bowl, too!

I use the frozen broccoli from Costco and dump over half of the bag into my blender and break it up into tiny pieces. This ensures that everyone is eating broccoli, whether they know it or not! Mwah-ha-ha!

Creamy Parmesan One Pot Chicken & Rice

If you love fettuccini Alfredo, you will love this chicken & rice from Nichole at The Salty Marshmallow. My kids do, too! I typically double her recipe and do not have leftovers. It is pretty easy to make and so creamy delicious. I’m getting hungry just writing about its yummy goodness.

Crockpot Green Chile Enchilada Soup

I really love Green Chile enchiladas. But my kids aren’t crazy about them {let’s just say that when I served enchiladas to my toddler twins, I was later washing enchilada off of the wall}. And enchiladas take a little more time to make. So enchiladas don’t usually show up on our menu unless they are for a special occasion (like Father’s Day or my hubby’s birthday). The good news is that this soup from Chelsea from Chelsea’s Messy Apron has all the yummy flavors of a delicious plate of enchiladas without so much work. I can throw all the ingredients in the crockpot in the morning and come home to enjoy a hearty, fantastic soup with some tortilla chips, extra cheese, and sour cream.
